The year 2008 came to its end plentiful of rainfall; that is the reason why olive trees started their new production cycle full of strength. The vegetative entry in March good and blooming came accompanied by an excellent climate.

Summer was hot and dry, which helped in the creation of wholesome fruits with a high quality and a high concentration in aromatic volatiles and a no-existence of plagues in the olive grove.

2009-2010 Crop Notes

Along September and October the ripening process of olives culminated with the result of a homogeneous and without stress product in the entire field.

The harvest was carried out in the precise fruit ripening and it was transformed in the following hours by means of an ecologic system of cold extraction in two phases, with a 15% output.

The maturing process has been developed in the cellar, which results in an optimal environment for the preservation of the exceptional organoleptic features of our PUESOLE 2009.
